This recipe takes the poke bowl trend and puts it in your hand by wrapping it in sushi rice. My son suggested this one—he’s a huge fan of poke, sushi, tartare, ceviche, and all other kinds of raw to lightly cooked fish—and when I tried it, I could see instantly that it was a keeper.

2–2½ cups Sushi Rice (see recipe on page 85)

2 teaspoons soy sauce

¼ teaspoon sesame oil

¼ teaspoon prepared wasabi

4 ounces sushi-grade tuna, diced

¼ cup chopped English cucumber, seeded

¼ cup toasted white sesame seeds
